The original prints were a 7.5" x 9" so they will print just fine at any 4:5 ratio. I would recommend going with 8"x10" will print fine and it will be easier to find a frame and matte for them in a more common size. There might be a little cropping on the left and right sides, but it will not really be noticeable. There is a cropping tool at checkout so you can set it manually, or you can just leave it be, and I can adjust it for you after you order and before it goes to the printer. I've enlarged all of these files, so when they are printed, they will actually get sharper and look better than your originals that you brought in to me.
I would recommend going with the luster finish, as that looks best with these kinds of photos.
